
| Baking Bread |

| About 10 years ago, just before beginning their lives of travel, the Anderson family owned a small one room bakery in Michigan—“Daily Bread Family Bakery”. They eventually closed the bakery and everyone had to start dieting… but the Andersons still enjoy the challenge of making good bread. Baking bread is a relaxing and fun way to get to know others in a community. Trying to convert recipes and find similar ingredients is a challenge but usually not impossible. In poorer places the greatest obstacle is an oven. A modern oven with its own gas supply is far too expensive an item for most families south of the border so baking bread is something that is usually still reserved for bakeries. Sometimes We will find a family with a wood-fired oven. These are usually interesting dome shaped structures that resemble a small igloo made out of mud, but they actually work quite well. The floor of the oven is loaded with wood that is allowed to burn until only hot glowing cinders are left. The hot cinders are pushed to one side of the floor while pans of raw dough are placed where the fire once was. It doesn’t have much of a thermostat but it does the job nicely for most breads. Many village ladies enjoy trying new recipes and there is plenty of time to share stories while we wait for the bread to rise. |
